As a full-time student and single mom with 2 teenagers, I was looking for wholesome meals that were easy/quick for all of us to enjoy. My somewhat picky eaters select their favorites from this group, and I eat whatever dishes they opt out of - lucky me - they are all fantastic, so it doesn't matter what's left!
