Absolutely loved this dish! Although it could have used more rice to absorb the flavorful sauce, we can easily add some next time. The seasonings were perfectly wonderful, not spicy and no East Indian touches. There are so many other East Indian dishes to choose from here that it was extremely nice to find this entree was different!
A perfect blend of flavors and textures. The dijon wasn't too overpowering, and the pork was nice and tender.
I loved the flavors of this dish! The dijon sauce and the rice and the spinach had me literally excited for each next bite. The spinach reminded me of collard greens - perfectly mushy with a vinegar bite that makes them stand out. I absolutely loved them. The pork was a bit tough, it tasted like it may have been a little overcooked, but it still had great flavor - and that's not easy with pork that has to be re-heated.
The Pork Dijon is tender and rice and sauce cook up perfectly. The sauce is delicious and my son eats it with bread to eat all the remaining sauce on his plate.
I make a similar dish when I have time to cook, but this dinner is great when we want to spend our time out of the kitchen. No texture or taste issues like some frozen meals from the grocery store. It is just like I cooked it myself instead of defrosting! A really good recipe as well.
Light Dijon sauce with mushrooms and onions is great. Best if allowed to thicken after the two warm up sessions in microwave. We served ours with steamed green beans and a green salad. Sour dough bread was great to enjoy every last bit of gravy.
