Tasty but too little substance. More vegetables! The volume of food would not make a whole meal for one person.
Meat was tender and veggies went well with sauce. Complete meal.
The pot roast and veggies are perfectly cooked--the vegetables aren't too mushy which is what often happens when I make roast for myself. This dish does need a little extra salt and pepper--which I just add at the table.
