This was a good combo of textures and flavors. The scrambled eggs were a little grainy when I microwaved this dish. Honestly, I would rather have had more big beans or tofu.
I love being able to groggily stumble into the kitchen in the morning, pop this into the microwave, and then have a tasty (and fancy!) breakfast in a couple minutes with no effort on my part. The tomato sauce is really savory and I always end up scraping the container for the last bit.
